YACON ROOT Smallanthus sonchifolius A sunflower relative with edible tubers grown throughout the Andean region. Yacon roots contain important quantities of potassium and antioxidants. Unlike many other roots and tubers, yacon does not store its carbohydrates as starch, but as fructooligosaccharide (FOS). Dried Yacon root powder contains 50-70% FOS and low proportion of simple sugars (e.g., glucose, fructose and sucrose). The human body has no enzyme to metabolize FOS, so it passes through the digestive tract providing few calories, making it great for dieters and diabetics. Yacon also acts as a prebiotic, the undigested portion serves as food for "friendly" bacteria, such as Bifidobacteria and Lactobacillus species, in the colon. Clinical studies have shown an increase in the number of these friendly bacteria in the colon while simultaneously reducing the population of harmful bacteria. Other benefits of regular FOS consumption include increased production of beneficial short-chain fatty acids, increased absorption of calcium and magnesium, increased bone density, improved absorption of vitamins, and improved elimination of toxins. Yacon has a mild sweet flavor and mixes well with juice and other foods. 2-4 teaspoons/day recommended.
